Bronze is a breed of turkey. It’s a slow growing breed therefore fuller flavoured. Named as such because viewed in a certain light a bronze coloured sheen is visible on their plumage.

Bit of Suffolk turkey history:

Suffolk and Norfolk were England’s original turkey rearing grounds. In the 17th and 18th centuries large flocks of turkeys were herded on foot from here to London (~100 miles), starting off September onwards, in time for Christmas. Leather boots were used to protect the Turkey’s feet.

Local free range bronze turkey

Free range turkeys, reared just three miles from us in the Suffolk countryside. Given access to grass and woodland day and night, bedded on fresh dry straw.

Reared by independent farmers.

Fed on a cereal diet. Free from any chemicals, drugs or growth promoters.

Naturally slow growing breed of turkey, grown to full maturity. Full flavour and good layer of fat – excellent for a juicy, tasty roast.

Dry hand plucked. Delayed evisceration. Game-hung in refrigeration to mature for about two weeks. This further tenderises and enriches the flavour.
