Bronze is a breed of turkey. It’s a slow growing breed therefore fuller flavoured. Named as such because viewed in a certain light a bronze coloured sheen is visible on their plumage.
Bit of Suffolk turkey history:
Suffolk and Norfolk were England’s original turkey rearing grounds. In the 17th and 18th centuries large flocks of turkeys were herded on foot from here to London (~100 miles), starting off September onwards, in time for Christmas. Leather boots were used to protect the Turkey’s feet.
